Quiet Sunday


Today was a little less busy for me today, late nights and a headache that wouldn't pass meant for a quiet day. I had mentioned to my big girl that I was going to cook today and she jumped at the chance to help me in the kitchen. We whipped up some choc-cranberry muesli bars in no time, ready for an afternoon snack. I cut the slice into squares so it would last longer but the recipe was cut into bars. So would you like to make some for yourself? Here is the recipe for you, I found it in the New Idea.

Choc-cranberry Muesli Bars

Ingredients

75g unsalted butter, chopped

1/4 cup golden syrup

1/4 cup brown sugar, firmly packed

1 cup plain flour

1 cup rolled oats

1/4 cup sultanas
1/4 cup sweetened dried cranberries
1/4 cup Milo

1/4 cup pumpkin seeds

1 egg, lightly beaten


Method
1. Grease an 18cmx28cm rectangular slice pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
2. Place butter, syrup and sugar in a medium saucepan. Stir over a low heat until smooth. Transfer to a large bowl.

3. Stir in flour, oats, sultanas, cranberries, Milo, seeds and egg until combined. Spoon mixture into prepared pan. Press evenly over base.
4. Cook in a moderate oven (180 C) for about 20 minutes, or until browned and cooked when tested. Cool completely in pan.

5. To serve, lift slice from pan. Cut into thin bars.

It can be stored in an airtight container for up to one week. For a change, replace the dried cranberries with chopped dried apricots, raisins or dates.
I enjoyed mine with a yummy hot chocolate. I found this new drinking chocolate powder from Woolworths the other day. It's fair trade, organic and delicious to have on these cold days.

  3. Hope your headache disappeared quickly. I love that first photo - it looks so warm and wintry. Your slice sounds yummy and with a slightly healthy edge to it. I'll have to try and find that hot chocolate powder - I've been using a Cadbury's one but that one sounds nice... x
