I usually make Monday meals easy after a day of shopping and baking. The last thing I feel like is a complex meal. So on tonights menu was Speedy Spinach Pesto which was so simple, required little preparation and was full of healthy greens. I think that simple dishes are often the best, they surely are my favourite to make.

57/365 Dinner Time
Tonights dinner was a pretty easy one especially after a day of shopping and baking and then back to school for debating. So I chose a dish on the menu that I could make for her and it could sit in the fridge until it was time for the rest of the family to eat. On the menu was Corn Fritters with sweet tomato, chilli sauce and a big plate of rainbow salad. I really love to be able to make a very quick and healthy dinner for my family, no need for takeaways here.

The loom craze has made it's way into our home. She has been busy for hours creating lots of bracelets.
I got a little bit of Easter shopping done for my little nieces and nephews. I'm thinking of putting just one egg in the cups along with a spoon and a sticker sheet to go with the book. And to go along with the board book for my one year old niece, maybe a bunny softie, that's the plan anyway.
This was our dinner tonight, give it a try it is sooo tasty that even both of my girls will eat it.

Spinach and Parsley Pesto
I cooked this yummy meal last week but I've been saving it so I could play along with Frog, Goose and Bear's Easy Peasy Dinners. It was a really fast dinner to cook and not only did it taste yummy with the pasta but because I doubled the pesto so for the next couple of days it was was nice on saladas for lunch.
Ingredients
1 cup parsley, firmly packed
1 cup English spinach, firmly packed
1/2 cup cashews
1/4 - 1/2 garlic clove
50 grams parmesan cheese, grated
3 tbls olive oil
Place all the ingredients into a food processor and blend until it forms a paste.
Serving Suggestions
- Stir through hot pasta.
- Stir the pesto, some peas and cold meat through cold pasta and serve as a salad.
- Spoon some onto half a baked potato, sprinkle some grated cheese on top and grill until cheese bubbles.
-Serve as a dip or on cracker.

Chicken with Crunchy Sage Crust
I thought I'd play along with Frog, Goose and Bear today and share an Easy Peasy Dinner with you. Last week I cooked Chicken with Crunchy Sage Crust for Miss 11's birthday dinner, it tastes delicious and is definitely easy!
Ingredients
1 tablespoon olive oil
500g chicken thigh fillets, chopped
2 bacon rashers, chopped
400g button mushrooms, halved
1/2 teaspoon ground nutmeg
420g can condensed cream of chicken soup
Steamed vegetables, to serve
Crunchy sage crust
50g butter, chopped
1 onion, finely chopped
8 slices stale white bread, torn into small pieces
1 tablespoon dried sage leaves
1. Heat olive oil in a saucepan. Add chicken in two batches. Cook, stirring occasionally, until browned. Remove.
2. Add bacon to same pan. Cook, stirring, until crisp. Return chicken to pan with mushroom, nutmeg and undiluted soup. Mix. Bring to boil. Simmer, uncovered stirring occasionally, for 15 minutes, or until mixture begins to thicken. Transfer to an ovenproof dish (12 cup capacity).
3. Meanwhile, to make sage crust, melt butter in a large frying pan. Add onion. Cook, stirring, until soft. Add remaining ingredients. Stir to coat bread in onion mixture. Sprinkle mixture over chicken.
4. Cook in a moderate oven (180 degrees) for about 30 minutes, or until crust is golden and crunchy.
5. Serve with steamed vegetables or roasted.
