A Day of Cooking!


Today was the first day of school today and so I did go to my local scrapbooking shop and spent a little bit on myself buying the latest Simply Handmade Magazine and a little tin for myself to alter to put some lollies in for the car. I know I probably shouldn't buy any more things for projects and just finish the ones I have already on the go but I have wanted to make one for a little while. Other than that just some much needed cooking for my family to enjoy for morning tea at school and work. The first is a Weetbix Chocolate Slice and a simple Banana Cake. Weetbix Chocolate Slice
Preheat oven to 180 degrees celsius. Line a lamington tin with baking paper. Crumble 4 Weetbix into a large mixing bowl, add 1 cup self-raising flour, 3/4 cup brown sugar, 3/4 cup desiccated coconut and 1 cup of dark chocolate chip. Stir to combine. Melt 150g of butter, add to the Weetbix mixture and stir to combine. Press the mixture into the prepared tin and bake for 20-25 minutes. Stand on a wire rack to cool. Top with melted dark or milk chocolate and leave for about an hour or until the chocolate is firm. Cut into squared to serve.

Banana Cake
Ingredients
125g butter
1/2 cup brown sugar
2 eggs
1 cup mashed banana
1/2 cup sour cream
2 cups self raising flour, sifted
Icing
1 1/2 cups of icing sugar, sifted
15g soft butter
1 teaspoon grated lemon rind
1-2 tablespoons lemon juice

1. Preheat oven to 180 degrees celsius. Cream the butter and sugar together until fluffy. Add the eggs one at a time, beating well. Stir in the mashed banana and sour cream.
2. Lightly fold in the flour. Spoon the mixture into a greased and lined 23x13 cm loaf time.
3. Bake fro 40-45 minuted, or until a skewer inserted into the centre comes out clean. Turn onto a wire rack to cool.
4. Mix together all the icing ingredients until smooth, then spread over the cooled cake. If necessary, the cake can be wrapped in freezer wrap and frozen.

  1. oh YUM, they both look so good. I was going to cook an orange cake today, but ran out of time - wish I had of now, your home cooking looks so lovely.
