After my recipe sorting the other week I was able to flick through my folder and find a new recipe that I've had sitting there for a while and haven't yet tried. It's a Donna Hay recipe that I collected out of Sunday's paper, there's often some really nice ones in there and I've collected a few but there's less now after the clean out. Anyway with nothing in the house to eat for afternoon tea I made this gingerbread loaf. It's got a nice soft ginger flavour that's not overpowering, a little like gingerbread men. I thought I would share the recipe for you just in case you might want to give it a try and just in case you need a little inspiration with lunchbox cooking which I always need.
¼ cup honey
¼ cup golden syrup
¾ cup brown sugar
½ cup milk
1¾ cup plain flour
½ teaspoon baking soda
1 teaspoon baking powder
1½ teaspoons ground ginger
65g butter chopped
1 egg
icing sugar for dusting
Preheat oven to 160℃. Place the honey, golden syrup, sugar and milk in a saucepan over medium heat and stir until sugar has dissolved. Place the flour, baking soda, baking powder, ginger and butter in the bowl of a food processor and process until the mixture resembles fine breadcrumbs. With the motor running, pour the golden syrup mixture into the processor and process until smooth. Add the egg and process until well combined. Pour the mixture into a lightly greased 9-cup capacity loaf tin lined with non-stick baking paper. Bake for 1 hour or until cooked when tested with a skewer. Dust with icing sugar to serve.

Catherine I have had a bit of a craving for ginger bread lately...I used to have the most amazing recipe but lost it in our move from East to West...will definitely try this, hopefully it gets the thumbs up :)
