At My House


Today I did a bit of cooking for the lunch boxes. Easy recipes today, the melt and mix type. A choc chip banana bread and some Anzac biscuits.


Choc chip banana bread
Ingredients
1 cup plain flour
3/4 cup self-raising flour
1 teaspoon baking powder

1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon bicarbonate of soda
2/3 cup dark brown sugar, firmly packed
2/3 cup milk chocolate chips
3 large ripe bananas

2 eggs, lightly whisked
100g unsalted butter, melted

1/4 cup milk
1 teaspoon vanilla extract

Icing
1 cup icing sugar, sifted
1 1/2 tablespoons boiling water
1 teaspoon soft butter

Method
1. Preheat oven to moderate, 180 degrees celsius. Lightly grease a 10x20cm loaf pan and line base and 2 long sides with baking paper.
2. In a large bowl, sift flours, baking powder, cinnamon, salt and soda together. Stir sugar and choc bit through.
3. In a bowl, mash bananas with a fork. Stir in eggs, butter, milk and vanilla. Lightly fold into the dry ingredients, until combined.

4. Pour into pan. Bake for 50-55 minutes, until cooked when tested. Cover with foil for the last 10 minutes of baking if too brown. Cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
5. Icing. In a small bowl, combine all ingredients together until smooth. Drizzle over loaf before slicing.

When the girls came home from school it time to chill and relax after a not so good day for them, so time for a bit of creative, painting.

  2. Yummo! I did my baking yesterday.. fully stocked up on anzacs, but that bannana bread looks so tasty it may have to be made (and eaten!) tomorrow!
    I was looking after my Mum today, driving her to the doctors and then I brought her home to surprise the girls when they got home from school.. They started swimming lessons today, so they were a little touchy too!

  9. Oh that banana bread looks FABULOUS!! I'm going to keep this recipe for the next time I've a glut of bananas (seems to happen often - we always seem to be given bananas just when we've bought a big load!!)
