I cooked this yummy meal last week but I've been saving it so I could play along with Frog, Goose and Bear's Easy Peasy Dinners. It was a really fast dinner to cook and not only did it taste yummy with the pasta but because I doubled the pesto so for the next couple of days it was was nice on saladas for lunch.
Ingredients
1 cup parsley, firmly packed
1 cup English spinach, firmly packed
1/2 cup cashews
1/4 - 1/2 garlic clove
50 grams parmesan cheese, grated
3 tbls olive oil
Place all the ingredients into a food processor and blend until it forms a paste.
Serving Suggestions
- Stir through hot pasta.
- Stir the pesto, some peas and cold meat through cold pasta and serve as a salad.
- Spoon some onto half a baked potato, sprinkle some grated cheese on top and grill until cheese bubbles.
-Serve as a dip or on cracker.
It wasn't my girl's favourite meal but they did give it a go but for me I just loved it and I hope you do too.

I really like pesto and we have parsley growing in our herb garden and I've just planted English spinach in our vegie patch so I would love to give this a try. I don't have a food processor but perhaps I could do this in our blender?
ReplyDeletewell done on making your own pesto! i must admit i get it out of a jar most often these days, but the real this is so much nicer.... we have spinach growing in the garden... and this recipe certainly does look easy.... certainly a winner!
