My Creative Space

This week I've been creating in the kitchen.  The tomato plants I planted a while ago have flourished with all the rain and produced an enormous amount of tomatoes that we just couldn't keep up with so I thought I would try my hand at making some tomato sauce. It was a bit of a process but I was stoked with having made my own sauce.  If you want to make your own I used this recipe from Feeding Fussy Kids.

5.4 kg tomatoes
115 g salt
500g onions, finely chopped
850g sugar
500 ml white wine vinegar

Cut the tomatoes into quarters and sprinkle with the salt.  Leave overnight.

Drain tomatoes thoroughly in muslin or fine colander, squeezing out all of the liquid.
Place the drained tomatoes into a large saucepan with the onions and sugar.
Boil vigorously for one hour with the lid off.  Stir occasionally towards the end of cooking time to ensure the mixture does not catch on the bottom. (I did this frequently) Cool.
Put mixture through a blender or mouli.  If you use a blender you will need to then put it through a sieve or strainer to remove all skin and seeds.
Return mixture to the pan and add the vinegar.
Cover and simmer for 1 to 1 1/2 hours, until thick.  Pour into warm sterilised glass bottles while still hot and screw on the lids.  Once a bottle is opened, keep in the fridge.
Unopened bottled sauce lasts for 12 months, opened 6 weeks in the fridge.

  19. My fingers are crossed that I will need this recipe in a few weeks when our tomato plants come into their own - that is if I can keep my toddler from eating them all straight from the vine!
