My oldest daughter loves to cook and collect lots of sweet recipes out of magazines, she has quite the collection now. Her favourite recipe to cook at the moment is meringues and has made them a few times now. This week she had a request from her friends at school to make them for their break up party today, so last night after yoga, with the help from her Dad they made meringues. This recipe is very simple, although a bit messy to pipe, and the result is a crunchy on the outside, soft on the inside meringue. They are very very sweet but nice as a little treat and even better homemade without all the preservatives.
4 egg whites
1 cup caster sugar
Food colouring and sprinkles to decorate
1. Place egg whites, sugar and 3 drops of food colouring in an electric mixer bowl. Beat on high speed for about 7 minutes, or until mixture is thick and glossy and sugar has dissolved.
2. Spoon meringue into a piping bag fitted with a 1.5cm fluted nozzle. Pipe 5cm rounds, 3cm apart, onto three oven trays lined with baking paper. Decorate with sprinkles.
3. Cook in a very slow oven (120℃) for about 45 minutes until firm. Remove. Cool on trays.

Oh yum! I've never tried piping meringues - I've only ever made pavlova - I love this idea - would be great to try with my girls in the holidays!

My girl loves to make pavlova..she tried meringues recently and burnt them to a crisp. I think I will encourage her to give them another try :)

Do you know, I'm actually sitting here now catching up on your blog posts with a cuppa and a meringue in hand! Paul's Aunty gave me a big tin of them when she dropped off a gift for Sophie last weekend and I've been trying to make them last as they're so yummy. I was going to try and make some myself when they run out so thanks for sharing the recipe xx
