Each night I write in my diary, a small manageable list of things I want to get done the next day. It not only helps me remember what I want to achieve (otherwise I'm likely to forget) but keeps me focused too. On my list of things to do yesterday was to cook with the girls. I haven't really felt like baking much over the holidays after Christmas and the hot weather here too has made it almost unbearable to turn on the oven. Yesterday the oven was turned on and some baking was done. The big girl and I made a batch of these jam drop biscuits, perfect timing too since we made a visit to a friend's house today and the jam drops have all been eaten.
Lucky Miss 7 and I made a cake so we still have that left to eat but not for too long. I found the recipe in my Donna Hay Chocolate Cookbook, a simple melt and mix, my favourite type of recipe. We made the Melt and Mix Chocolate Coconut cake and iced it using this chocolate frosting recipe. Here's the recipe if you feel like trying it for yourself.
250 g butter, melted
¾ cup cocoa powder, sifted
1⅓ cups caster sugar
4 eggs
1½ cups self-raising flour, sifted
1 teaspoon baking powder
¾ cup milk
Preheat the oven to 160℃. Combine all the ingredients in a bowl and whisk until smooth. Pour all the ingredients in a bowl and whisk until smooth. Pour into a 20cm square cake tin which has been lined with non-stick baking paper. Bake for 1 hour, or until cooked when tested with a skewer. Allow to cool in the tin for 10 minutes then turn onto a wire rack. When completely cool, spread with icing. Enjoy.

ReplyDeleteIn our house that chocolate cake would have been gobbled up in moments :) We recently made a Donna Hay cake mix which we blogged about. It tasted like a real fair dinkum cake which is always a bonus too unlike most cake mixes xo
