Easy Orange Cake

It's been a cold day today.   I've tried to keep warm rugging up, drinking lots of tea and baking. When the weather is cold I find it really hard to cream butter and sugar so I went looking for a recipe that used melted butter instead. I found the recipe here and I thought you might like to try it too. It's a good recipe if you don't want to spend too much time cooking and if you want an easy cake to bake. I ended up using less icing sugar (2 cups rather than 2½) but it still made plenty icing to put on the cake.


Ingredients
1 orange (washed thoroughly)
180 grams of melted butter
3 eggs
1 cup of caster sugar
1½ cups of self raising flour
Icing
2 tablespoons of melted butter
2 cups of icing sugar
enough orange juice to make a spreadable icing


Preheat oven to 180C. Grease and line the base of a 12cm x 22cm loaf tin. Cut one orange into large chunks, leaving the skin on. Place in a large food processor and blend until well pureed. Add 180g melted butter, eggs, sugar and flour then process until well combined. Pour the mixture into the tin and bake for 50 minutes, or until an inserted skewer comes out clean. Remove from oven and allow to cool for five minutes, then turn out of tin and cool on a wire rack. To make the icing, mix icing sugar with two tablespoons melted butter. Juice remaining orange and add small amount to icing mix to obtain a spreadable consistency. Ice the cooled cake.

  3. I love an orange cake. I have a nice orange and almond cake I like to bake for gluten free friends, but you need to boil the oranges for a while first... This looks like a nice easy recipe (got to love a food processor cake!)

    Cold here too. Brrr. We put on brave faces and warm coats for a walk in the botanical gardens, followed by hot chocolate.
