Today I really wanted to get more painting done and make a start on a patchwork cushion for my big girl's birthday, but today is Tuesday, my lunchbox cooking day. So I thought after a visit to my friend's flower shop and a bit of procrastinating I'd better get home and start baking. Well I probably should have stuck with the painting and sewing because my cooking was a bit disastrous.
The orange marmalade cake has been cleverly iced to cover the dip in the centre and the oat and sultana biscuits, burnt, and generally not tasty. I needed something else to offer for a lunchbox treat so I thought I'd take the safe option and make a chocolate slice, with some very runny icing, oh well. Next time I'll have to craft instead, there's always tomorrow though. This is our all time favourite chocolate slice recipe.
1¼ cups self-raising flour
2 tablespoons cocoa
¾ cup coconut
½ cup caster sugar
125g butter
1 egg
Chocolate Icing
1 cup icing sugar
1 tablespoon cocoa
vanilla
hot water
1. Mix dry ingredients together.
2. Melt butter, beat egg well. Add both to dry ingredients.
3. Mix well then press into a flat tin.
4. Bake 10-15 minutes in moderate oven.
5. Cut into squares.
6. When cool pour chocolate icing over top and leave to set. Divide squares.
Chocolate Icing
1.Sift icing sugar into a bowl.
2.Blend cocoa with a little hot water.
3.Add to icing sugar with enough water to make a smooth paste.
4.Flavour with vanilla.
Enjoy♥
that gooey, runny icing looks yummm!
ReplyDeletedon't you hate kitchen days like that?
my kids don't get home baking but luckily they think capsicum and olives are treats :-)
I just love that you have a lunchbox cooking day. Fantastic.
ReplyDelete(even if everything didn't turn out the way you'd have liked!)

ReplyDeleteI love cooking day at your house - even if you did burn a batch of biccies... :)
ReplyDeleteThanks for the slice recipe! I can't wait to give it a try this weekend when I do my household baking..

Yum! The chocolate slice looks very like the one I've been making for years from a Womens Weekly cookbook. Always a hit in this house. I did lunchbox baking yesterday too - though a double batch of biscuits was all I managed.
ReplyDeleteI make a chocolate slice with the same ingredients ( from memory that is ) but slightly different quantities. Yours looks delicious. x
ReplyDeleteThrilled to discover you're normal and have baking disasters, admittedly not as catastrophic as mine tend to be though! x
ReplyDeleteWhat lucky girls you have to get homemade baked goodies every week in their lunchbox! So glad to hear that others have baking disasters too! That chic slice looks delicious - runny icing and all!
ReplyDeleteDelicious. Thanks for the slice recipe.
ReplyDeleteI remember Monday used to be Mums cooking day. x
