Cooking

Today I really wanted to get more painting done and make a start on a patchwork cushion for my big girl's birthday,  but today is Tuesday, my lunchbox cooking day.  So I thought after a visit to my friend's flower shop  and a bit of procrastinating I'd better get home and start baking.  Well I probably should have stuck with the painting and sewing because my cooking was a bit disastrous.




























The orange marmalade cake has been cleverly iced to cover the dip in the centre and the oat and sultana biscuits, burnt, and generally not tasty.  I needed something else to offer for a lunchbox treat so I thought I'd take the safe option and make a chocolate slice, with some very runny icing, oh well.  Next time I'll have to craft instead, there's always tomorrow though.  This is our all time favourite chocolate slice recipe.
1¼ cups self-raising flour
2 tablespoons cocoa
¾ cup coconut
½ cup caster sugar
125g butter
1 egg

Chocolate Icing
1 cup icing sugar
1 tablespoon cocoa
vanilla
hot water

1. Mix dry ingredients together.
2. Melt butter, beat egg well.  Add both to dry ingredients.
3. Mix well then press into a flat tin.
4. Bake 10-15 minutes in moderate oven.
5. Cut into squares.
6. When cool pour chocolate icing over top and leave to set.  Divide squares.

Chocolate Icing
1.Sift icing sugar into a bowl.
2.Blend cocoa with a little hot water.
3.Add to icing sugar with enough water to make a smooth paste.
4.Flavour with vanilla.

    my kids don't get home baking but luckily they think capsicum and olives are treats :-)

  4. Yum! The chocolate slice looks very like the one I've been making for years from a Womens Weekly cookbook. Always a hit in this house. I did lunchbox baking yesterday too - though a double batch of biscuits was all I managed.
