Cream Cheese, Coconut and Lime Cookies


I really love routine. It can be hard to get that when life gets busy sometimes but I always try to keep things fairly predictable, it helps children know what to expect. I love to cook and so Monday's are my baking day so my girls and hubby have something yummy to eat at school and work. Today I baked some cookies and a butterscotch and peanut slice. I thought I would share with you the cookie recipe. It ended up making 48 biscuits so it's a great recipe to hopefully last to the end of the week but I usually end up baking something again towards the end of the week because everything is already eaten. I hope you enjoy them!

Ingredients

250g butter, softened

90g soft cream cheese

1 tablespoon finely grated lime rind

1 cup firmly packed brown sugar
2 eggs

1 1/4 cups plain flour
1 cup self-raising flour

1/2 cup desiccated coconut


Method

1. Preheat oven to 180 degrees/160 degrees celsius fan forced. Grease oven trays; line with baking paper.
2. Beat butter, cream cheese, rind and sugar in small bowl with electric mixer until light and fluffy. Beat in eggs, one at a time. Transfer mixture to large bowl; stir in sifted flours and coconut, in two batches.

3. Roll level tablespoons of dough into balls, place about 3cm apart on trays; flatten slightly. Bake about 15 minutes; cool on trays.


*I used heaped teaspoons of mixture and ended up making about 48 biscuits.

  2. HI Catherine, The bickies look very yummy. I have started to get into more of a routine with baking as well. I am trying to only bake once a week and freezing things that are suitable. I popped by yesterday and wrote out two of your recipes, both slices. I made them up, and just wanted to say thanks for sharing. They are very nice. The boys and hubby loved them.

    Will make a big batch of bickies tomorrow and freeze them. Hopefully that will keep us going until next week again. ;-)
