Apple Muffins

Each week when I plan our menu I look for simple and different things to cook and bake.  I went looking back through my old Donna Hay magazines and found a muffin recipe great for school lunch boxes.  The recipe says it makes 12 muffins  but I found it made 24 muffins which means there is plenty for afternoon tea or you could freeze some them for later.

Apple Muffins
¾ cup vegetable oil
1½ cups caster sugar
½ cup milk
3 eggs
¼ cup sour cream
2½ cups self raising flour, sifted
1½ teaspoons ground cinnamon
⅓ cup rolled oats
1 green apple, grated
extra rolled oats and raw sugar, for sprinkling

1. Preheat oven to 180℃. Place the oil, caster sugar, milk, eggs and sour cream in a bowl and whisk until smooth.  Place the flour, cinnamon and oats in a bowl and mix to combine.
2. Spoon into 12 greased ½ cup capacity muffin tins (I think mine must have been smaller, maybe ⅓ cup).  Sprinkle with extra oats and raw sugar.  Bake for 25 minutes or until cooked when tested with a skewer.

I'm not sure what's on the menu for this week, do you have any yummy lunchbox treat links or ideas?

  1. These sound really nice - thanks for sharing the recipe - I like the idea of being able to freeze extras for later.

  2. These look really simple and I have all the ingredients here in my house. I think I'll try them tomorrow. Thanks for the recipe! I find it hard with the ever growing list of "forbidden" ingredients that cannot go in the lunchboxes. Lots of my homemaking has handfuls of nuts so they are a no no.

  3. Yum! I usually have all these ingredients here all the time. I hate when you have to go out for just one thing. Think I'll try these.

  4. Believe it or not, I'm not a huge Donna Hay fan but two things work in their favor - simple to make and recommended by a great cook!

  5. Yummy, love a good apple anything!! Funny how recipes can either stretch or barely feed one??!! Love Posie

  6. yum. I love Donna Hay recipes. Today I made homemade chocolate icecream with my icecream maker, stewed some pears, and a tuna rice bake. i feel all wholesome and content now! Charmaine

  7. Oh thanks Catherine for this recipe. Your photo totally sells this muffin! I am still fairly new to Donna Hay so I don't think I had this recipe- until now! Yay. I too do the weekly menu and always looking to keep the family interested in anything beyond noodles. xx

  8. Oh good, I'm pleased it's not just me that finds recipes say they make a certain amount and it ends up double! They would be a big hit here... thank you... gxo

  9. Looks yummy and what a bonus that you got 24 instead of 12! I love recipes that use up sour cream, so many recipes call for 2 tablespoons and I never know what to do with the rest.

Thank you for taking the time to stop by and comment on my blog I really appreciate each and every comment I read. Have a lovely day. x
