Muscle Power Balls

I know that all of us are looking for healthy treats to eat and to give to our family so I have another yummy recipe for you to try.  This recipe is out of my favourite go to book 'Feeding Fussy Kids'.  I love this book for it's simple ingredients, the whole foods it uses in it's recipes and for the great healthy ideas for the girls lunch boxes, I love healthy snack ideas.
⅔ cup dried apricots
½ cup pitted dates
1 cup sultanas
4 tablespoons boiling water
½ cup ground almonds
1½ cups desiccated coconut (approximately)
½ teaspoon vanilla essence

Place the apricots, dates and sultanas into a food processor and pulse until finely chopped.
Add the boiling water and leave the fruit to soak for 10 minutes or so.
Add the ground almonds, ½ cup of the coconut and the vanilla essence and blend until it forms a firm paste.
Roll the mixture into small balls and coat in remaining coconut.
Keep in an airtight container in the fridge.

If you are looking to make your Muscle Power Balls nut free you could substitute the almonds with skim milk powder or some ground rice.

  1. YUM! Thank you Catherine. I have been making a slice using just dates, almonds, cocao and coconut oil, my boys love it but I'm really sick of it, so can't wait to make these! x

  5. These are also a great idea for some of those Christmas 'bring a plate' occasions which are coming up in the not to distant future. It will be great to have something healthy to nibble on at these events.

  8. They look divine Catherine! I am loving that book...been meaning to make those ones for quite awhile but haven't got there....you have inspired me to go and pull out that bag of dates i brought for the recipe ages ago lol!
