The slice was nice and easy and the perfect way to use up a couple of lemons from the bag full that my parents gave me the other weekend. The only problem I had with the slice was when I took it out of the oven in the recommended time it was still a little runny so I put it back into the oven to cook for a little longer, unfortunately I cooked it just a bit too long. It still tastes nice and with a bit of icing sugar on top looks nice too.
Lemon Slice
250g unsalted butter, softened
85g icing sugar, plus extra for dusting
2½ cups plain flour, sifted
4 lemons
4 eggs
400g caster sugar
1 tsp baking powder
1. Grease and line base of a 4cm deep, 30x20cm slice pan.
2. Place the butter and icing sugar in a food processor and process until well combine. Add 2 cups of the flour and process until the mixture comes together in a ball. Press into the base of the prepared pan and chill for 15 minutes.
3. Preheat the oven to 170℃.
4. Place pan in the oven and bake for 15 minutes, then set aside to cool while you prepare the topping. Finely grate rind from 2 of the lemons, then juice all 4 lemons. (you will need about 90ml of juice which I got from 2 lemons).
5. Whisk together eggs and caster sugar in a large bowl until well combined. Add remaining flour, and the baking powder, rind and juice. Whisk gently to combine. Pour mixture over cooled base and return to oven for a further 30 minutes or until topping is set and tinged golden. Cool in the pan, then cut into slices.
6. Dust with extra icing sugar to serve. Recipe found on the Taste website.

oh dear. i recently gave up lemon slice, only because I love it so much and couldn't stop eating it. this looks so good though. maybe just one more slice :)
