Chocolate Butter Cake

It was Miss 7's turn to cook in the kitchen first this week and she was pretty excited when I told her we were going to bake a chocolate cake, especially since she gets to lick the beater which is always the best part of cooking.  So I went looking through my cook books and found a simple recipe in The Country Show Cookbook for us to make.

185g butter, chopped
¾ cup caster sugar
3 eggs
1 cup self-raising flour
½ cup plain flour
⅓ cup cocoa
½ cup milk

1. Preheat oven to 180℃.  Grease a deep 20cm round cake tin and cover base with baking paper.
2. Add all ingredients to medium bowl of electric mixer, beat on low speed until ingredients are combined.  Then, beat on medium speed until mixture is smooth and changed in colour.
3. Pour mixture into prepared tin.  Bake in oven for 1 hour.
4. Stand a few minutes before turning onto wire rack to cool. Top cold cake with chocolate frosting.

Rather than using the frosting recipe in the book I found one on the Taste website I liked the sound of more and it's really yummy!

100g soft butter
2 cups of icing sugar
1 tablespoon of cocoa powder
2 tablespoons of milk

To make the frosting, place butter in a large bowl and use an electric beater to briefly beat until creamy. Sift over the combined icing sugar and cocoa powder, and beat until combined.  Add the milk and beat until fluffy.  Spread frosting over cooled cake.

  9. Nothing beats a chocolate cake. I have that cookbook and it's got so many delicious recipes - particularly for those with a sweet tooth!
