Zesty Mandarin Cake

It feels like a while since I've shared a recipe on here with you.  This recipe isn't healthy but it is yummy.  Sometimes I figure it's ok to have these types of things for one thing it keeps my family happy and although it may not be entirely healthy I do know exactly what has gone into the cake and for me that's ok.  Mandarins are in season at the moment so you might like to give it a try, if you like citrus and moist cakes this one is for you.

Cake
100g butter
90ml of mandarin juice
2 eggs
100g caster sugar
100g icing sugar
100g self raising flour
½ teaspoon baking powder

Icing Glaze
100g icing sugar
90ml mandarin juice

1. Turn your oven on to 180℃ to heat up and lightly grease a cake tin of 20cm with butter.  Then line the base with baking paper.
2. Juice your mandarins and sieve any pulp from the juice.  The juice need to be 90mls worth.
3. Over a gentle heat, place your butter into a saucepan and melt.  Once done, set it aside and leave it to cool down.
4. Into a large mixing bowl, crack open your eggs.  Add to them your caster sugar and icing sugar and whisk until light and fluffy.  If you don't have a whisk, a fork works too.
5. Stir in your melted butter (make sure it's cool) and sift the flour and baking powder into your mixing bowl and pour in the mandarin juice.  Mix all the ingredients together with your wooden spoon.
6. The cake mixture will then be ready to pour into its tin and placed in the oven.  Once it's been in the oven for 18 minutes, carefully skewer the centre of the cake.  It should come out clean but if not put it back in for another 3-4 mins or until cooked.
7. When the cake is removed from the oven, let it cool in the tin and then carefully place on to a cooling rack.
8. The icing is a quick and easy glaze.  Once again make approximately 90mls of pulp free mandarin juice.  Sift the icing sugar into a bowl and add the juice and combine.
9. Then pour the glaze on top of the cake and let it drizzle over the sides.

This cake was a big hit with my family I hope you enjoy it too.

  8. A recipe to keep for next year since we can not find mandarins anymore.
    With margarine and gluten free flour .....no gluten and no diary.....perfect for me!

  9. I totally agree that a cake, despite containing sugar, is much healthier when it's homemade and you know what's gone into it. This sounds absolutely delicious Catherine... am going to buy some mandarins tomorrow and give this one a go for sure! x
