216/365 'Cooking in the Kitchen'

It was my usual weekly cooking day today and I decided to try a couple of new recipes.  Every week I make an effort to try one new dish, either a dinner or lunch box treat.  When I first wrote that down as a weekly goal I thought it would have been hard to achieve but trying just one new thing isn't as hard as you think and really it's fun to find new favourite recipes.  So today I made Chocolate and Beetroot Loaf, a Donna Hay recipe featured in the Sunday paper.  I'm not sure if it will make it onto the favourites list but hey it's something new to try.  I also tried these because I have a bit of a thing for Bounty bars oh and I love anything chocolate and coconut.  They were a little bit fiddly to make but they do taste good so it was worth it and they will be a nice healthy treat to have with a cup of tea I'm thinking. 
So would you like to make something different this week?  Here is the recipe I used today for the Chocolate and Beetroot Loaf Cake.
 11/4 cups self raising flour
1/4 Dutch cocoa sifted (I used cacao instead)
1 cup caster sugar (I used raw)
125g unsalted butter, melted
2 eggs, lightly beaten
1 cup milk
1 teaspoon vanilla extract (I just used essence)
2 cups grated raw beetroot

Preheat oven to 180℃. Place the flour, cocoa, sugar, butter, egg, milk and vanilla in a large bowl and whisk until well combined.  Add the beetroot and mix to combine.  Pour into a 10x21cm lightly greased loaf tin lined with non-stick baking paper.  Bake for 45-50 minutes or until cooked when tested with a skewer.  Allow to cool in the tin for 5 minutes before turning out on to a wire rack to cool completely.

  1. Both these sweet treats look delicious. Baking lunchbox goodies is on my list today, and with beetroot in the fridge and plenty of coconut on hand I will have to give these both a try.

  2. Those Bounty bars look yummy! It's good when something fiddly is worth the effort taste-wise. I have been really uninspired when it comes to dinners lately...

  4. I remember making a chocolate beetroot cake years ago...it was fun to have others guess the secret ingredient...quite a distinct taste. xxx

  5. I love the look of the"bounty" bars. My girls love coconut and would be delighted at the chance to taste-test them. I may have to put the ingredients on the shopping list!
