Do you ever have times when one thing after another seems to creep up on you? A couple of weeks ago my car needed new rear tyres, no problem we got them put on and a wheel alignment, it's important to make sure our car is safe. Then last week I noticed one of the new tyres going flat so I took it into back and a nail was in the tyre but they could fix it so that was good. I then went to use the vacuum cleaner and the handle wouldn't stay extended, the vacuum was still under warranty (yeah) so a new one was sent. On Monday night I thought I would cook some muffins for lunches when I took the muffins out of the oven they weren't cooked, my 6 year old oven is broken.:( They will be no cooking in the oven this week! Someone is coming over on Friday to look at the oven so I'm hoping it will get fixed so I can do some more baking. I haven't let any of the little hiccups get to me but sometimes you just have to shrug your shoulders and just get on with things.
Enough of the rambling, with only the stove top to do cooking and with some fresh greens picked from the garden this morning, I thought I would make a garden salad. To go with the salad we have fish and homemade chips, so without the oven working I decided to have potato salad instead but rather than using bought mayonnaise I used this recipe to make my own. It was very easy and it had a creamier taste, a bit spicy so I added some lemon to the salad which took away the spicy taste. My oldest loved it so much there's no leftovers, they're in her lunchbox.
