Lunch

Lunch for me has to be easy but healthy.  I'm not someone who enjoys sandwiches very much, I'd rather eat something like crackers with hummus.  With lots of lettuce in the garden at the moment my new go to lunch is a easy salad of grated carrot and cheese, some chopped tomato, avocado and garden lettuce.  I don't often add a dressing but I've come up with a new creation, for me, that I love drizzled on top made up of a teaspoon each of honey, mayonnaise and dijon mustard. It's now a favourite for my salad loving girls too, they're much more of the salad eating type than the vegetable type.
Do you go to a lot of trouble for lunch?  Have you got a favourite go to lunch recipe?

  2. Yum! Yes I love salad too but I'm finding it hard to eat salad as often in winter. I actually love melted sandwiches at this time of year or soup. But to be honest, it is a mental thing because looking at your lovely pic of your salad vegies has me salivating for their crunchy goodness. If I have carrot and cheese I can't help but throw in a few sultanas. But my all time fav salad for lunch or dinner or on pasta, is what my hubby and I call bruschetta mix. It is just large diced toms, cucumbers, red onion, garlic (finely chopped with salt and lemon juice to soften it) copious amounts of chopped fresh herbs (basil, parsley, thyme - whatever is in the garden) and avocado. And same as you, I don't opt for dressing much but recently I've been hooked on organic apple cider vinegar and macadamia oil (or extra virgin olive). You have reminded me that I owe it to myself to go to more effort at lunch time! ta :-)

  3. I love salads. My favourite salad dressing is vey similar to your new favourite Catherine except that I also use balsamic vinegar and instead of mayonnaise use olive oil...I must try yours.

  4. Sounds delicious! I have veggie eating boys, although they do like carrot and cucumber sticks. Must start adding salads to the menu for them. x

  5. I'm really bad with lunch for myself. A sneaky junk food lunch or no lunch at all a lot of the times. I definitely have to change that!

  6. Like the sounds of your dressing. I've been having lots of soups lately - a good way to get lots of vegetables into my diet and a nice winter warmer too :) Both my girls like their vegetables - if you ask Grace what her favourite meal is, she'll usually say salad :)

  8. I like soups for lunch in winter, but yours is the type of salad I like when the weather is warmer...very healthy and I like the look of that organic mayo too.

  9. I have been really slack lately about lunch - this week Ginger and I have had cucumber slices, cherry tomatoes, celery with cream cheese, a handful of almonds and a few crackers. That said, she eats this - but never did the sandwiches I made:)

    Salads are a go-to lunch here in the summer time and is eaten most days..I'm far too lazy during the cold months to go to much trouble so always make extra at dinner time that can be reheated for lunch the next day :)
    That dressing sounds delicious Catherine.

  12. I have a salad most days but usually just use hummus or salsa for a dressing as I've been unable to find any "good/healthy" bottled dressings. But this sounds delicious and I can't wait to give it a try.
