Menu Monday


Do you sometimes have days where nothing gets done but other days where you are so motivated that you just have to run with things and get lots done? I was having one of those days on Sunday, along with the usual things like ironing and lunches I actually managed to get a menu written for the week and today got the ingredients for it, so hopefully I won't need to visit the shops again this week. Here's my menu:

Monday - Sweet Potato Soup with Chilli Corn Bread
Tuesday - Lamb Rigatoni Bake
Wednesday - Mild Curry of Chicken, Sweet Potatoes and Split Peas
Thursday - Beef and Vegetable Curry
Friday - Leftovers ( Meals frozen from the week)
Saturday - Pizza (Homemade base with toppings)
Sunday - Tacos

It's so much easier having a menu planned out and not having to think about what to cook. Although I have the days planned, if I feel like something else I usually swap things around. So tonight we had the soup and I thought you might like the recipe. It's really simple, tastes lovely and sweet, and perfect for the cold nights we've been having.

Ingredients
1 tablespoon of olive oil
1 brown onion, chopped
700g sweet potato, peeled and chopped
4 cups chicken stock
2 tablespoons maple syrup
1/2 cup pouring cream
sea salt and cracked black pepper
1/2 tablespoon chopped flat leaf parsley leaves

Heat a saucepan over medium heat. Add the oil and onion and cook for 3-4 minutes. Add the sweet potato, stock and maple syrup and cook for 20-25 minutes or until the potato is tender. Use a hand-held blender to blend the soup until smooth. To serve, stir in the cream and top with the salt, pepper and parsley.

  1. That soup sounds yum! Might need to give it a go. I have lots of soup when hubby is on night shift (as he hates soup!). I menu plan...have a menu on my sidebar each week. Any recipes you like the sound of let me know and I'll share.

  2. YUM! I love sweet potato soup! I do usually meal plan. It does make the week much easier. I don't like the sitting and doing it part or the shopping part. Online supermarket shopping has become me new best friend!

  3. The soup looks delicious! I generally meal plan - at least my week turns out better when I do. Last week we had a pumpkin, cauliflower and lentil curry that was divine. I couldn't find Jalfrezi sauce so I used butter chicken instead.     BTW we are having fajitas this week and I noticed the mexican packets on sale at Woolies this week. Hope that helps.

  4. Your soup sounds yummy, thanks for sharing the recipe. Good on you for making the most of your 'motivated day' and getting lots done. I menu plan too and feel more organised with dinner and grocery shopping when I do. These wintery nights have called for soups for us too and lots of casseroles in the slow cooker.

  6. I am a weekly menu nazi!
    If I dont have a menu and a plan, my week gets very ugly.
    Boys help me plan, so they have a say in what we eat, next step is to get them cooking :)
    And I love all soup.
