Monte Carlos

I love to cook and make different recipes all the time but mostly I like recipes that are pretty quick and easy.  Although monte carlos aren't difficult they are a bit fiddly so I don't make them often but this week I thought I would. My Mum would often make these biscuits for school lunches too which is something I remember fondly when I make these old fashioned recipes.  The only problem with making yummy biscuits like these is they don't last long.  I made them on Tuesday and today they are all gone:(  Oh well, at least they must have liked them.  This is the recipe I used.


125 g butter, softened
⅓ cup brown sugar
1 teaspoon vanilla essence
1 egg
¾ cup self-raising flour
½ cup plain flour
⅓ cup desiccate coconut
½ raspberry jam


Buttercream
60g butter, softened
¾ cup icing sugar mixture
½ teaspoon vanilla essence


1. Preheat oven to 180℃/160℃ fan-forced.  Line 3 baking trays with baking paper.
2. Using an electric mixer, beat butter, sugar and essence until light and fluffy.  Add egg.  Beat until combined.  Sift flours over butter mixture.  Stir to combine.  Stir in coconut.
3. Roll heaped teaspoons mixture into balls.  Place on trays, 3cm apart.  Using a fork dipped in flour, lightly flatten each biscuit until 1cm thick.  making a criss-cross pattern in tops.  Bake for 12  to 15 minutes or until light golden.  Stand on trays for 5 minutes.  Transfer to a wire rack to cool completely.
4. Meanwhile, make buttercream using an electric mixer, beat butter, sugar and vanilla until light and fluffy.  Sandwich biscuits with 1 teaspoon of jam and 1 teaspoon of buttercream. Serve.

  4. I definitely will be trying these out - delicious!!! I made a batch of choc chip biscuits on Monday and I am down to the last few - time for more baking :)

  5. I had no idea monte carlos were anything besides the arnott's things in a packet, which I always thought would be nice if only someone would invent a homemade recipe for them! I'll definitely be making these. Thank you!

  7. dangerous, dangerous recipe Catherine. Monte Carlos are my favorite arnott's biscuits...... but what could be better than homemade monte carlos!! I have linke a few of your recipes to my blog today - now I've just got to actually make some time to bake them!
